Coffee & Banana Bread

To make 1 Loaf, for up to 5 people.

INGREDIENTS

Coffee - 3-5 Tbsp

Banana - 3-4 average to large

Peanut Butter - 3-4 heaped Tsp

Baking Powder - 2 Tsp

Eggs - 2-3 Large

Milk Chocolate Chips - 70g

Vanilla Extract - 2-3 Tsp

INSTRUCTIONS

1. Start by pre heating an oven to 180 degrees.

2. Then, brew some Coffee, freshly ground whole bean is the best.

3. Next, add between 3-4 Bananas to a large mixing bowl.

4. Spoon in 3-4 Tbsp of Peanut Butter.

5. Then, between 3-5 Tbsp of freshly brewed Coffee.

6. Next, we need to add 2-3 Tsp of Baking Powder, and 2-3 large Eggs.

7. Mash everything up thoroughly until you have a relatively smooth Batter*

*Don’t worry if there are a few lumps in the Batter as we are not using flour, but get it fairly smooth, and be quick, we don’t want the Banana to turn brown

8. Next, line a Loaf tin with grease proof paper.

9. Add around 50g of Milk Chocolate Chips to the Batter, and stir in thoroughly.

10. Pour the Batter out into the Loaf tin, and sprinkle over the remaining Chocolate Chips.

11. Place the tin in the oven and bake for around 35-45 minutes, depending on how hot your oven runs*

*We want the Loaf to be moist, but set, so run a knife into the middle of the Loaf, and soon as it comes out clean, it is ready

12. Once the Loaf is ready, remove it from the oven, leave it to set and cool down, for around 15 minutes.

13. Lift the Loaf out of the tin, and peel away the paper.

14. Cut the Loaf into slices, and serve warm or cold.
