Hot Honey Glazed Bacon Cheeseburger
To make 5-7 Burgers.
INGREDIENTS
Sriracha - as much as required
Dijon Mustard - 2 Tbsp
Mayonnaise - 2 Tbsp
Tomato Ketchup - 2 Tbsp
Lemon - 1 Lemon
Baby Gem Lettuce - 1/2 a Lettuce
Red Onions - 3 Large Onions
Pickled Jalapenos - 25g
Pickled Gherkins - 25g
18% fat Beef mince - 600g
Smoked Streaky Bacon - 5-6 rashers
Burger Cheese slices - 8-10 slices
Honey - 1-2 Tbsp
Chilli Flakes - 1 heaped Tsp
Brioche Burger Buns - 5-7 Buns
Butter - 1-2 Tbsp
INSTRUCTIONS
1. Start by frying off a few slices of smoked Streaky Bacon in a pan set to medium.
2. While the Bacon cooks, take your red Onion, and finely dice up around half.
3. Then, dice up around 25g of pickled Gherkins, and 25g of pickled Jalapenos.
4. Pop the Onion, Gherkins and Jalapenos into a mixing bowl.
5. Next, fairly finely, dice up half of a baby gem Lettuce.
6. Add the Lettuce to the bowl.
7. Season, and add the juice from half of a Lemon.
8. Add 2 Tbsp of the Gherkin pickling juice, and 2 Tbsp of the Jalapeno pickling juice.
9. Next we need 2 Tbsp of Dijon, 2 Tbsp of Tomato ketchup and 2 Tbsp of Mayonnaise
10. Finish the Sauce with as much Sriracha as required, you can make it mild, medium or hot*
*These measurements will make enough Burger Sauce for around 6-10 Burgers, it will keep in the fridge for 3-4 days, and can be frozen.
