Sausage & Cheddar Rolls

To serve 4-6 people.

INGREDIENTS

Sausages - 450g

Extra mature Cheddar Cheese - 200g

Puff Pastry - 320g

Smoked Paprika - 1 Tsp

Cumin - 1 Tsp

Nutmeg - 1/2 whole Nutmeg

Fennel Seeds - 1 Tsp

Parsley - 1 small handful (20-30g)

Egg - 1 medium

INSTRUCTIONS

1. Start by removing the skins from the Sausages.

2. Add the Sausage meat to a large mixing bowl.

3. Grate in the Cheddar Cheese, and season.

4. Add a Tsp of Fennel seeds, a Tsp of Cumin, and, a Tsp of smoked Paprika.

5. Grate in around half of a whole Nutmeg.

6. Then, Finely dice the Parsley, and add it to the mix.

7. Mix everything together thoroughly.

8. Crack an Egg into a small bowl or cup, and whisk with a folk.

9. Lay the Pastry out onto a baking tray and place the Sausage meat in the middle.

10. Shape the Sausage mix into a long Sausage, and, brush one side of the Pastry with the Egg wash.

11. Fold over the Pastry, then trim off any excess.

12. Brush the Sausage roll in the Egg wash, sprinkle over some Cheddar, fennel seeds and some sea Salt.

13. Bake in the oven for between 30-40 minutes, until the Pastry is puffed up and golden brown.

14. Remove the Sausage roll, and it can be eaten hot, warm or cold.

15. Cut the Roll into slices as thick as you like, and serve.
