Spicy Onion Cheeseburger

To make 3-5 Burgers.

INGREDIENTS

Dijon Mustard - 2 Tbsp

Mayonnaise - 2 Tbsp

Tomato Ketchup - 2 Tbsp

Lemon - 1 Lemon

Baby Gem Lettuce - 1/2 a Lettuce

Pickled Jalapenos - 25g

Pickled Gherkins - 25g

18% fat Beef mince - 600g

Smoked Streaky Bacon - 4 rashers

Red Onions - 3 Large Onions

Burger Cheese slices - 8-10 slices

Chillies - 3 Chillies

Sriracha - as much as required

Brioche Burger Buns - 3-5 Buns

Butter - 1-2 Tbsp

 INSTRUCTIONS

1. Start by finely dicing up half a red Onion.

2. Then, dice up around 25g of pickled Gherkins, and 25g of pickled Jalapenos.

3. Pop the Onion, Gherkins and Jalapenos into a mixing bowl.

4. Next, fairly finely, dice up half of a baby gem Lettuce.

5. Add the Lettuce to the bowl.

6. Season, and add the juice from half of a Lemon.

7. Add 2 Tbsp of the Gherkin pickling juice, and 2 Tbsp of the Jalapeno pickling juice.

8. Next we need 2 Tbsp of Dijon, 2 Tbsp of Tomato ketchup and 2 Tbsp of Mayonnaise*

*These measurements will make enough Burger Sauce for around 6-10 Burgers, it will keep in the fridge for 3-4 days, and can be frozen.

9. Start by frying off a few slices of smoked Streaky Bacon in a pan set to medium.

10. While the Bacon cooks, take your red Onion and slice them up.

11. Then, slice up the Chillies.

12. Remove the Bacon from the pan and cut it into small pieces, turn the heat to medium, and add the Onions.

13. Start to gently sweat them off.

14. Once the Onions start to get soft, add the Chillies, and season.

15. As the Onions and Chillies cook, take the Beef mince and gently massage together, without compressing it too much.

16. Take a small handful, and flatten out your Burger patty’s, make them a little bigger than the Buns.

17. Once the Onions are soft with a light touch of colour, add a Tbsp of Honey.

18. Then, deglaze the pan with some Balsamic Vinegar, and reduce to a syrup.

19. Place the spicy glazed Onions to one side ready.

20. Place a pan on a medium heat, add a knob of Butter and lay in the Burger buns.

21. Gently toast the Buns, then remove them from the pan.

22. Next, turn the heat up as high as possible, season the Patty’s.

23. Once the pan is screaming hot, lay in the Patty’s.

24. Sear the Patty’s on one side for a minute, then flip.

25. 1 minute on the other side, then flip again.

26. Turn the Patty’s again, and lay over a Cheese slice.

27. Place the Bun’s on a plate, lay on the Burger Patty’s.

28. Spoon on some of the Onions, and add some Bacon pieces.

29. Finish with some of the Burger Sauce, pop the tops on the Burgers, and serve.
