Asparagus with Garlic & Herb Butter

(To serve as many as required)

INGREDIENTS

Asparagus - as much as required

Butter - 100-200g

Garlic - 2-3 cloves

Shallot - half of an average shallot

Parsley - small handful

Coriander - small handful

Chives - small handful

Lemon - 1 Lemon

 INSTRUCTIONS

1. Start by adding around 200g of softened Butter to a blender.

2. Then, roughly dice half a Shallot, and 2-3 cloves of Garlic.

3. Add the Shallot and Garlic to the Blender, along with a small bunch of Parsley, Coriander, and Chives.

4. Blitz this up until smooth, then add Lemon zest, a squeeze of Lemon juice, and season with Salt and Pepper.

5. Blitz this up again until really nice and smooth, then transfer the Butter into a container and chill in the fridge.

6. Once the Butter is chilled, remove the hard stalks from the Asparagus.

7. Add a dash of Oil to a hot pan and lay in the Asparagus.

8. Move the Asparagus around, coating it in the Oil, then season with Salt and Pepper.

9. Keep turning the Asparagus, and fry for 2-3 minutes, until you have a slight char and some colour*

*be careful not to overcook the asparagus, we want it with some bite

10. After 2 minutes, when the Asparagus has some colour, add 2 Tbsp of the Butter, and remove the pan from the heat.

11. Toss, and baste the Asparagus in the Garlic and Herb Butter for a further 1-2 minutes.

12. Lay the Asparagus on a plate, add a good dollop of some of the Butter, scatter over some finely diced Herbs, and serve.
