Goats Cheese, Apple & Walnut Brioche

To make 2 sandwich’s.

INGREDIENTS

Apple - 2-3 apples

Goats Cheese - 150g

Walnuts - 1 handful

Honey - 1 Tsp

Baby gem Lettuce - 1 Lettuce

Sugar - 1 Tbsp

Brandy - 60ml

Brioche Burger Buns - 1 Bun per sandwich

Thyme - 3-4 sprigs

Cloves - 6 cloves

Star anise - 2 star anise

Lemon - 1 lemon

 INSTRUCTIONS

1. Start by thinly slicing the Lettuce, add it to a bowl, and sprinkle in some Thyme leaves.

2. Next, crush the Walnuts in a Pestle and Mortar, and set them aside with the Lettuce.

3. Then, slice the Apples into eighths, remove the cores, but leave on the skins.

4. Add a frying pan to the hob, and turn the heat to a low medium.

5. Add a Tbsp of Butter along with the spices, and when it’s melted, lay in the Brioche Buns, flat side down.

7. Toast off the centre of the Bun’s, then remove them from the pan, and set them aside.

8. Add another knob of Butter, turn up the heat a little, and throw in the Apples.

9. Add a pinch of Salt and Pepper, and cook out the Apples for 5 minutes until they start to soften.

10. Once soft, deglaze the pan with a splash of Brandy.

11. Reduce the Brandy to a syrup, then sprinkle the Apples with some Sugar, and caramelize.

12. Turn off the heat and allow the Apples to slightly cool.

13. Slice the Goats Cheese, and add some pieces to the Brioche Buns.

14. Add some Lemon zest, and juice, to the Lettuce.

15. Add a small handful of the Lettuce to the Sandwich, then, a sprinkle of the Walnuts.

16. Drizzle over some Honey, and lay on some pieces of the caramelized Apple.

17. Place the lid on the Sandwich, and serve.
