Hot Cross Bun Burger

-To make 4-6 Burgers

INGREDIENTS

Beef Mince (20% fat) - 500g

Hot Cross Buns - 4-6 buns

Burger Cheese slices - 8-10 slices

Bacon - 6-8 rashers

Sriracha - as much as required

Mayonnaise - as much as required

Honey - as much as required

Lemon - 1 large lemon

INSTRUCTIONS

1. To make the Burger Sauce, add 1 part Sriracha, to 2 parts Mayonnaise, to 1 part Honey*

*for 4-6 servings of sauce you want, roughly, 8 Tbsp of Mayo, 4-5 Tbsp of sriracha, and 4-5 Tbsp of honey

2. Mix thoroughly, then season with Salt and Pepper, zest in a Lemon, and add a squeeze of the Lemon juice.

3. Mix the Sauce, taste, and make any adjustments required*

*my ratio of 1,2,1 is just a guideline, adjust yours to your level of spiciness

4. Next, take the Beef mince and gently massage it together, but don’t compress it too much.

5. Then take a small handful of Beef and flatten it out into a Beef patty, around 1cm thick, and make it 2cm wider than the hot cross buns as it will shrink when cooked.

6. Cut the Hot cross buns in half.

7. Place a frying pan on the hob, turn the heat to medium, and lay in the Bacon.

8. Gently render the fat, and cook the Bacon until it starts to get nice and crispy.

9. Remove the Bacon, but leave the fat in the pan.

10. Use a kitchen towel to remove any little pieces of Bacon from the pan as they will burn.

11. Add some Butter to the pan, and once it’s gently foaming, lay in the hot cross bun’s

12. Toast off the insides of the bun, then remove them from the pan.

13. Clean out the pan, turn the heat up high, and season the Beef patty’s with Salt and Pepper.

14. Add a small dash of Oil to the pan.

15. Lay the Beef Burger Patty’s.

16. Agitate them, move them around every few moments, and flip them every 45 seconds to build up a good caramelisation.

17. The Burgers will take around 3-4 minutes*

*cook them longer if you want them well done, or use a heat probe if you want to be precise, around 50 degrees for medium rare, and around 63 degrees if you don’t want them pink

18. When you have about 1 minute left, add 1-2 slices of Burger Cheese, and give them a minute to melt.

19. Remove the Burgers when cooked, and the Cheese has started to melt,

20. Leave the Patty’s to rest for 4-5 minutes.

21. To build our Burgers, add some of the Sauce to the base of the Bun, lay on the Patty, add a couple of slices of Bacon, top them off with a dash more Sauce, then place on the lid, and serve.
