Sausage & Pepper Sub Sandwich
To serve around 4 people.
INGREDIENTS
Sausage - 3 sausages per sandwich
Peppers - 1 pepper per sandwich
Bread Roll - any of your choice
Brown Sugar - 2 Tsp per serving
Balsamic Vinegar - 2 Tbsp per serving
Garlic - half a bulb
Rosemary - small bunch
Thyme - small bunch
Butter - 1 Tbsp
INSTRUCTIONS
1. Start, by placing the Sausage in a frying pan set to medium/high.
2. Once the Sausage has some colour, add Butter, Rosemary, Thyme and Garlic to the pan.
3. Baste the Sausage in the foaming Butter for around 7 minutes, or, until they are cooked.
4. Remove the Sausages, and clean out the pan.
5. Thinly slice the Bell Pepper.
6. Add a dash of Olive oil to the pan, and set the heat to medium.
7. Add the Peppers and slowly sweat them down until they are nice and soft.
8. Once they are soft, scatter over some brown sugar, and caramelise .
9. Season the Peppers with Salt and Pepper.
10. Slice the Sausage into thirds, then add those back into the pan with the Pepper.
11. Stir in the Sausage, and deglaze the pan with Balsamic Vinegar.
12. Reduce the Vinegar until you have a sticky glaze.
13. Slice your Bread in half, add the Sausage and Peppers, and serve.
