Avocado, Bacon & poached Egg Sourdough

To serve as many as required.

INGREDIENTS

Eggs - 2 per person

Avocado - 1 per 2 people

Bacon - 1 rasher per person

Sourdough Bread - 2 slices per person

 INSTRUCTIONS

1. Start, by cutting off a few slices of the Sourdough Bread.

2. Place a frying pan on a medium heat and add the Bacon.

3. Fry the Bacon until crispy, then cut it up into pieces.

4. Next, add a sauce pan of water to a very low heat, get the water to a simmer, then reduce the heat so the Water is just shimmering, without bubbles.

5. Crack the Egg into a cup or bowl, then swirl the Water to create a vortex, and drop in the Eggs.

6. Poach the Eggs until they are set but with perfect soft yolks, around 3-4 minutes.

7. While the Eggs Poach, toast the Sourdough.

8. Once cooked, remove the Egg, and gently pat them dry with a tea towel.

9. Take the Avocado, remove the stone and scrape out the flesh.

10. Add the Sourdough to a plate, spread over some Avocado, and lay on the Egg.

11. Finish with a scattering of crispy Bacon pieces, a touch of Salt and Pepper, and serve
