Pea & Ham Soup

To serve 4-6 people.

INGREDIENTS

Ham - 180g

Smoked streaky Bacon - 100g

Onion - 1 average onion

Frozen Pea’s - 700g

Vegetable Stock - 2 pints

Butter - 1 flat Tbsp

INSTRUCTIONS

1. First, finely dice the Bacon.

2. Place a Dutch oven on a medium heat, and add a dash of Olive Oil.

3. Add the Bacon to the pan, and cook until you have some colour.

4. While the Bacon fry’s off, finely dice the Onion.

5. Once the Bacon has some colour, add the Onion, and sweat it off.

6. Once the Onion is soft, sweet and translucent, add the Pea’s, and season with Salt and Pepper.

7. Then, pour in enough stock to just cover the Pea’s, and simmer for 7 minutes.

8. Next, blend the Soup until smooth, but with a little texture, then return it to the same pan.

9. Add the Ham, stir and simmer for a further 5 minutes.

9. Taste and adjust the seasoning.

10. Finish with a flat Tbsp of Butter, stir it through, and serve.
