Caramelised Onion Puree

To make enough Puree for 5-8 people.

INGREDIENTS

Onions - 2 average sized onions

Cream - as much as required (around 70ml)

 INSTRUCTIONS

1. Start by slicing the Onion into strips.

2. Place a frying pan on a low heat and add a dash of Olive Oil.

3. Pop the Onion in the pan, season, and start to sweat them down.

4. Once the Onion is nice, soft and sweet, turn up the heat and caramelise*

*Don’t be shy, get some nice dark colour on the Onion, almost to the point that they look slightly burnt

5. Once done, pop the Onions into a blender and add a few Tbsp of Cream.

6. Blend for a moment, then adjust with any more Cream.

7. Blend again until you have a lovely smooth, thick Puree, then adjust the seasoning if you need*

*Only add as much Cream as you need to get the Puree to a nice, smooth, thick consistency, add Cream, blend, and adjust

10. Spoon the Puree out into a bowl, and serve.
