Cherry Tomato & Burrata Tart

To make 4 Tarts.

INGREDIENTS

Puff Pastry - 320g

Cherry Tomatoes - 300g

Burrata - 1 Burrata

Fresh Basil - small handful

Thyme - small handful

Balsamic Vinegar - 1 Tbsp

Tomato paste - 1 flat Tsp per pastry

INSTRUCTIONS

1. First, pre heat the oven to 180 degrees.

2. Chop the Tomatoes in half, and add them to a mixing bowl.

3. Add a drizzle of extra virgin Olive Oil, and a splash of balsamic Vinegar.

4. Take a few sprigs of Thyme, scrape the leaves into the bowl, season with Salt and Pepper, and mix up the Tomatoes.

5. Next, roll out the Pastry, cut it into quarters, and fold over the edges to create a border.

6. Add a flat Tsp of Tomato paste to each Pastry and spread it on the inside.

7. Whisk an Egg in a small bowl, creating an Egg wash, and brush this onto the Pastry.

8. Spoon in the Tomatoes, filling the Pastry case.

9. Then, season, and place the Tarts into the oven to bake for around 30 minutes*

*times can vary dependant on how hot the oven runs, so remove the Tarts when the Pastry has puffed up and is golden brown

9. While the Tarts bake, take a Burrata and cut it up on a plate, then, finely dice the fresh Basil.

10. When ready, remove the Tarts, Tear over some of the Burrata, sprinkle over some of the Basil, and serve.
