Roasted Cherry Tomatoes
To serve 2-4 people.
INGREDIENTS
Vine Cherry Tomatoes - 200g
Garlic - 2-3 cloves
Thyme - 1 small handful
Extra virgin Olive Oil - as much as required
INSTRUCTIONS
1. Pre heat an oven to 180 degrees.
2. Place the Tomatoes in a roasting tray, with the vines left on.
3. Add a few sprigs of fresh Thyme, and 2-3 whole cloves of Garlic*
*leave on the skins but gently crush the cloves with the back of a knife
4. Drizzle with extra virgin Olive Oil.
4. Season with Salt and Pepper, and massage to coat the Tomatoes in the Oil and seasoning.
5. Place the tray in the oven, and roast for around 30 minutes*
*times can vary, also, you can roast them more or less dependant on your preference (I go with 30 minutes)
