Cod Fillet & crispy Chorizo

To serve 2 people.

INGREDIENTS

Cod Fillet - 2 fillets

Chorizo - 300g

Flour - 1-2 Tbsp

 INSTRUCTIONS

1. Start, by dicing the Chorizo into small cubes.

2. Add a frying pan to a medium heat, and place in the Chorizo.

3. Add a tiny dash of Oil, and slowly render out the fat.

4. Take the Cod Fillet, season with Salt and Pepper, then lightly dust in plain Flour.

5. Once the Chorizo has rendered and has started to get slightly crispy, remove it from the pan and lay in the Cod.

6. Fry the Cod in the Chorizo for around 2 minutes on each side, turning every 30 seconds.

7. Place the Cod on a plate, scatter over some Chorizo pieces, finish with a little drizzle of the Chorizo Oil, and serve.
