Sardine & Anchovy Pate

To serve 2-4 people.

INGREDIENTS

Sardines - 2 tins (120g each)

Anchovy - 1 tin (3-6 fillets)

Shallot - 1 average shallot

Butter - 100g

Cream - 3-4 Tbsp

Parsley - 1 handful

Lemon - 1 lemon

Bread - 1 loaf of your choice

INSTRUCTIONS

1. First, add the Sardines to a blender.

2. Roughly chop up the Shallot, and add 2-3 Tbsp.

3. Add the Anchovy*

*between 2-6 fillets, adjust to your taste

4. Next, place in around 100g of unsalted butter.

5. Finish with between 2-3 Tbsp of Cream, season with Salt and Pepper, and blend until smooth.

6. Adjust the consistency with anymore Butter or, Cream.

7. Blend again, then, zest in a Lemon, add a squeeze of Juice and then, pop in a handful of fresh Parsley.

8. Blend for a further 30-40 seconds to incorporate the Parsley, and spoon the Pate out into a bowl to serve.

9. Cut the Bread into fairly thick slices, toast under the grill, smother in the Pate, and serve.
