Cod in Parsley Sauce

To serve 2 people.

INGREDIENTS

Cod - 2 fillets

Parsley - 1 handful

Cream - 3-5 Tbsp

Fish Stock - 60ml

Milk - 1 pint

Plain Flour - 1 Tbsp

Butter - 1 Tbsp

 INSTRUCTIONS

1. Start by finely dicing a handful of Parsley, and cutting your Cod fillets into inch sized cubes.

2. Place a saucepan on a low medium heat.

3. Add a Tbsp of Butter, and once the Butter melts, a Tbsp of plain Flour.

4. Stir the Flour and Butter as it cooks to form a paste.

5. Slowly start adding Milk, one splash at a time, until you have a nice Bechamel sauce, or white sauce*

*we don’t want the sauce too thick, so make it the consistency of heavy, or, double cream

6. Add some Fish stock, season, and stir through the sauce.

7. Finish the sauce with some cream, the Parsley, and stir.

8. Place the Cod into the sauce to gently poach.

9. After 2-4 minutes add the Cod and sauce to a plate, best with minted Pea’s, and mashed Potato, and serve.
