Black Pudding Sausage Rolls

To serve 4-6 people.

INGREDIENTS

Sausages - 6-8 sausages

Black Pudding - 350g

Puff Pastry - 320g

Onion Powder - 1 Tsp

Garlic Powder - 1 Tsp

Smoked Paprika - 1 Tsp

Cumin - 1 Tsp

Fennel Seeds - 3 Tsp

Nutmeg - a third of a whole nutmeg

Egg - 1 whole egg

 INSTRUCTIONS

1. Start by grinding your Fennel seeds into a powder with a pestle and mortar.

2. Add 3 Tsp of the Fennel powder to a bowl.

3. Also, 1 Tsp of Cumin, 1 Tsp of Smoked Paprika, 1 Tsp of Garlic Powder, 1 Tsp of Onion powder.

4. Mix the spices together, and also, pre heat the oven to 180 degrees.

5. Next, finely dice up the Black Pudding.

6. Add the Sausage meat to a mixing bowl, discarding the skins.

7. Add the black pudding

8. Grate in a third of a whole Nutmeg, and 2 Tsp of the spice mix.

9. Season, and mix the Sausage filling together thoroughly.

10. Next, whisk a whole Egg in a bowl, to make an Egg wash.

11. Roll out the Pastry and lay on the Sausage mix.

12. Shape the filling on top of the Pastry.

13. Brush the Pastry, around the filling, with the Egg wash.

14. Roll over the Pasty, cut off any excess, and shape into a large Roll.

15. Brush the Sausage Roll in the Egg wash, and sprinkle over some whole Fennel seeds and sea Salt.

16. Place the Sausage Roll in the oven and bake for between 30-40 minutes, until the Pastry is puffed up and golden brown.

17. Remove the Sausage Roll from the oven, and serve hot, or cold.
