Harissa Chicken Tray Bake

To serve up to 4 people.

INGREDIENTS

Chicken thighs - 8 thighs

Red Onions - 3-4 average Onions

Bell Peppers - 4-5 Large Peppers

Fresh Mint - small handful

Fresh Coriander - small handful

Harissa Paste - 4-5 Tbsp

 INSTRUCTIONS

1. First, pre heat the oven to 180 degrees.

2. Take a large baking tray.

3. Roughly chop up the red Onion, cut it into quarters to keep it nice and chunky.

4. Add the Onion to the baking tray.

5. Roughly cut up the Peppers, make them the same size as the Onion and add them to the tray.

6. Then, lay in the Chicken thighs.

7. Drizzle over some Olive Oil, and season.

8. Add the Harissa paste, and massage it into the Chicken and Vegetables.

9. Place the tray in the oven and bake for around 45 minutes

10. When it is ready, remove the Tray, and finely dice up the Coriander and Mint.

11. Lay 2 thighs per person onto the plate, along with some of the Pepper and Onion, scatter over the herbs, and serve.
