Parmesan Scrambled Eggs

To serve 2 people.

INGREDIENTS

Eggs - 4 eggs (2 per person)

Parmesan - 60g

Cream - 10ml

Chives - 1 small handful

Bread - as many slices as required

 INSTRUCTIONS

1. Start by cutting off as many slices of Bread as you need, 2 per person.

2. Then, crack the Eggs into a mixing bowl, and grate in the Parmesan.

3. Beat the Eggs very gently with a folk, but do not season yet.

4. Then, finely dice some Chives, and place in a bowl.

5. Place the Bread under the grill, and add the Eggs to a pan, on a low/medium heat.

6. Gently stir the Eggs as they cook until they are perfectly creamy.

7. Turn the Bread once golden brown and toasted.

8. Add a small splash of Cream to the Eggs, and Season.

9. Give the Eggs one last good stir, then remove the toast from the grill and lay it onto a plate.

10. Spoon over some of the Eggs.

9. Finish with a grating of Parmesan, and a sprinkle of Chives, and serve.
