Spicy Chorizo Quesadillas
To make 6 Quesadillas.
INGREDIENTS
Chorizo - 200g
Extra mature Cheddar - 300g
Pecorino Romano - 150g
Pickled Jalapenos - 1 Tbsp per Quesadilla
Flour Tortillas - 12 large Tortillas
 INSTRUCTIONS
1. Start, by grating out the Chorizo*
*we want a chorizo mince meat consistency
2. Then, grate the Cheddar Cheese into a mixing bowl.
3. Next, grate in the Pecorino Romano.
4. Mix the Cheeses together.
5. Take a dry non stick frying pan and add a Tortilla.
6. Add around a handful of Cheese and sprinkle over some of the Chorizo.
7. Lay over some Jalapenos, and add a tiny pinch of Salt and Pepper.
8. Lay another Tortilla on the top, and flip every 30 seconds until the Cheese is melted and the Tortilla is crispy.
9. Remove the Quesadilla, cut it into quarters, and serve
