Sweet & Sour Peppers

To make around 3-5 servings.

INGREDIENTS

Bell Peppers - 3-5 large peppers

Fresh Basil - 1 handful

Red Wine Vinegar - 2-3 Tbsp

Brown Sugar - 2 heaped Tsp

 INSTRUCTIONS

1. Start, by cutting off the floret’s of the Peppers, discarding the seeds and cores.

2. Slice the Peppers into fairly thin strips (Julienne).

3. Add Olive Oil to a frying pan on a medium heat.

4. Add the Peppers, and season.

5. Sweat down the Peppers until they start to get soft, but without colour.

6. Scatter over some brown Sugar, and caramelise.

7. Deglaze with a splash of red Wine Vinegar.

8. Reduce to a thick sticky syrup.

9. Finely dice some fresh Basil, scatter over the Peppers, and serve.
