“Weekday” Tomato Sauce

To make around 1 litre.

INGREDIENTS

Tomato Passata - 1.2kg

Garlic - 3-5 cloves

Fresh Basil - a small handful

INSTRUCTIONS

1. Start by removing the skin from between 3-5 cloves of Garlic.

2. Pop a high walled frying pan, or saucepan, on a low/medium heat.

3. Add a tiny dash of Olive Oil, and chuck in the Garlic cloves.

4. Pour in the Passata*

*the amount of Passata you use is up to you, you can make a huge batch of this sauce by scaling up the ingredients

5. Pop in a small handful of fresh Basil.

6. Bring to a simmer, and reduce the Sauce by around a third.

7. Remove the Garlic and Basil, and your Sauce is ready.

8. Leave it to cool down for storage, or use immediately.
