Anchovy Sandwich

To make 2 Sandwich’s.

INGREDIENTS

Anchovy - 150g

Sourdough Bread - 1 loaf

Shallots - 1 shallots

Parsley - small handful

Butter - as much as required

Lemon - 1 lemon

INSTRUCTIONS

1. To start, thinly slice some Shallots.

2. Place the Shallot in a bowl, zest in a Lemon, add a drizzle of the Anchovy Oil and a squeeze of Lemon juice.

3. Add a few twists of freshly ground Pepper, and mix the Shallots.

4. Next, Cut off, and toast as many slices of Sourdough as you need.

5. Once toasted, lay a slice of Sourdough on the plate.

6. Spread over a generous layer of Butter.

7. Lay over some Anchovy fillets.

8. Scatter over some of the dressed Shallots.

9. Tear over some Fresh Parsley, and serve.
