The Perfect Bacon Sandwich

To make 1 sandwich.

INGREDIENTS

Smoked streaky Bacon - 3 rashers

Smoked back Bacon - 3 rashers

White farm house loaf - 1 loaf

Butter - 1 Tbsp

HP Sauce - 1 Tbsp

 INSTRUCTIONS

1. Start by laying the Streaky Bacon into a frying pan.

2. Cook the streaky Bacon slowly until it is nice and crispy*

*or, how ever you like your bacon cooked

3. Once the streaky Bacon is cooked, remove it from the pan and lay in the Bacon Back.

4. Fry the Bacon back until it starts to get slightly crispy, but we want this Bacon to have some chew to it*

*streaky is very fatty, so works well really crispy, but bacon back is leaner and meatier so you don’t want to fry it as long, or get it it as crispy

5. Slice the Bread into nice 2/3cm slices.

6. Once the Bacon back is cooked, add the streaky Bacon back into the pan to re heat.

7. Push the Bacon to the edge, and add a Knob of Butter to the pan.

8. Lay in the Bread so it soaks up, and toasts off in the Butter and Bacon fat.

9. Once one side of the Bread is toasted, remove it from the pan.

10. Spread some Butter to the toasted side of the Bread, lay over the streaky Bacon one way, then, lay on the Bacon back in the opposite direction, so it is Criss crossed for texture.

11. Add around a Tbsp of HP sauce, and serve.
