Caprese Salad

To serve up to 4 people.

INGREDIENTS

Mozzarella - 200g

Burrata - 250g

Pancetta - 80g

Cherry Tomatoes - 250g

Fresh Basil - small handful

Balsamic Vinegar - 2-3 Tbsp

Extra Virgin Olive Oil - 3-5 Tbsp

INSTRUCTIONS

1. To start, fry off the Pancetta until it has rendered out it’s fat, and started to get slightly crispy.

2. Then, Cut the Cherry Tomatoes in half, and place them into a mixing bowl.

3. Add the Pancetta to the Tomatoes, and mix them through thoroughly.

4. Lay the Burrata onto the centre of a plate.

5. Thinly slice the Mozzarella, and lay it around the outside of the plate.

6. Add the Tomatoes and Pancetta, and tear over some fresh Basil leaves.

7. Cut the Burrata in half so it spills out, then drizzle over some extra virgin Olive Oil, and Balsamic Vinegar.

8. Season with Sea Salt, a little freshly ground black Pepper, and serve.
