Cheesy Chorizo Brioche Melts

-To make 4 Rolls

INGREDIENTS

Brioche Rolls - 4 rolls

Chorizo slices - 8 slices

Cheddar Cheese - 200g

Burger Cheese slices - 8 slices

Parmesan - 100g

Butter - 2 Tbsp

INSTRUCTIONS

1. To start, grate out the Cheddar Cheese into a mixing bowl.

2. Then, grate half the amount of Parmesan into the same bowl.

3. Mix the Cheese together.

4. Lay a Burger Cheese slice onto one side of the Brioche.

5. Add a small handful of the Cheese mix.

6. Then, lay on a couple of thin slices of Chorizo, and another Cheese slice.

7. Add a tiny pinch of Salt and Pepper.

8. Place a frying pan on a low/medium heat and add a generous knob of Butter.

9. While the Butter melts, and starts to gently foam, cut off a sheet of grease proof paper*

*big enough to cover the brioche

10. Lay the Brioche into the foaming Butter.

11. Place over the grease proof paper, and with a spatula, press down on the brioche to flatten it out.

12. Then, flip over the Brioche, lay over the Paper and press it down again.

13. Flip the Brioche every 45 seconds, keep compressing it with the spatula.

14. Repeat this process until the Cheese is melted and oozing out, and the Brioche is dark, golden brown and crispy

15. Remove the Brioche from the pan, leave it to rest for 2-3 minutes to cool, and serve.
