Caramelised Onion & Goats Cheese Tart

To make 4 Tart’s.

INGREDIENTS

Puff Pastry - 350g

Red Onions - 2-3 average sized onions

Brown Sugar - 1 flat Tbsp

Balsamic Vinegar - 4-5 Tbsp

Goats Cheese - 150g

Butter - 1 Tbsp

Egg - 1 egg

 INSTRUCTIONS

1. Start, by fairly finely slicing the red Onions.

2. Add a dash of Olive Oil to a non stick pan, on a medium heat.

3. Chuck in the Onions, and season.

4. Caramelise the Onions, then add a knob of Butter, and a few Tsp of brown Sugar.

5. Caramelise the Onions in the Sugar, then deglaze with a good Splash of Balsamic Vinegar.

6. Reduce the Vinegar to a thick sticky syrup, then set aside to cool.

7. Lay out the Puff pastry and cut into 2 inch by 3 inch sheets.

8. Place the Pastry’s onto a baking tray.

9. Cut the Goats Cheese into slices, and pre heat the Oven to 180 degree’s.

10. Lay some of the Onions onto the Pastry, and fold over the edges to create a border.

11. Whisk a whole Egg in a small bowl to create an Egg wash, then brush this over the borders of the Pastry’s.

12. Place the Pastry’s into the Oven and bake for around 20 minutes, until the they start to puff up and go light brown.

13. Lay some of the Goats Cheese on to the Pastry’s, and bake for a further 10 minutes.

14. Once the Cheese is melted, and the Pastry is puffed up and golden brown, remove the Tart’s from the oven, and serve.
