Spicy Cheese & Jalapeno Quesadillas
To make around 4-6 Quesadillas.
INGREDIENTS
Pickled Jalapenos - as many as required
Cheddar Cheese - 350-400g
Parmesan - 150g
Tortillas - 12 flour tortillas
INSTRUCTIONS
1. Start, by dicing the Jalapenos, and placing them to one side.
2. Then, grate out the Cheddar Cheese into a large mixing bowl.
3. Add the diced Jalapenos to the bowl.
4. Grate in the Parmesan, and mix the Cheese and Jalapenos together.
5. Place a large non stick frying pan on a low medium heat, and place in a Tortilla.
6. Add enough of the Cheese and Jalapeno mix to cover the base, lightly season with Salt and Pepper, then place another Tortilla on top.
7. Fry gently, turning every minute, until the Cheese is melted and gooey, and the Tortilla will have toasted and gone crispy.
8. Remove the Quesadilla, cut into quarters like a Pizza, and serve.
