Tomato & Mascarpone Sauce

To serve 3-4 people.

INGREDIENTS

Onion - 1 large onion

Garlic - 3-6 cloves

Fresh Basil - small handful

Tomato Puree - 1 Tbsp

Tomato Passata - 900g

Mascarpone Cheese - 2-3 Tbsp

INSTRUCTIONS

1. First, fairly finely dice the Onion.

2. Then, do the same with between 3-6 cloves of Garlic.

3. Take a small handful of Basil, and coarsely dice it up.

4. Next, add a generous splash of Olive Oil to a pan, and add the Onion.

5. Sweat off the Onion with out colour until it is nice and soft.

6. Add the Garlic and also sweat this off for 2-3 minutes.

7. Then, add a heaped Tbsp of Tomato paste, and roast for 2 minutes.

8. Season with Salt and Pepper, and add the Tomato Passata.

9. Gently simmer for around 15 minutes.

10. Scatter in the Basil, and add 2-3 Tbsp of the Mascarpone Cheese.

11. Use the Sauce with any Pasta you wish, and serve.
