Confit Tomato & Goats Cheese Toast
To make serve around 4 people.
INGREDIENTS
Cherry Tomatoes - 300g
Garlic - 8 cloves
Olive Oil - as much as required
Fresh Basil - 1 handful
Bread - as much as required
Goats Cheese - 150g
Thyme - small bunch
INSTRUCTIONS
1. Start, by removing the skins from around 8 cloves of Garlic.
2. Add the Cherry Tomatoes to a roasting tray, along with the Garlic.
3. Also, add some fresh thyme to the tray, and cover the Tomatoes in Olive Oil.
4. Season with Salt and Pepper, then place the Tomatoes into the oven, set to between 100 - 130 degrees.
5. Bake the Tomatoes gently for around 2 - 2.5 hours.
6. We remove the Tomatoes when they have slightly wrinkled, but have not broken down, burst or fully wrinkled up.
7. Remove the Tomatoes, transfer them into another bowl, and drizzle in the Confit Oil.
8. Next, cut off a few slices of some Bread of your choice, and place them under the grill to toast.
9. While we have a moment, dice the Goats Cheese into small pieces, and finely dice the fresh Basil.
10. Once the Bread is Toasted, lay over the Tomatoes.
11. Add some of the Goats Cheese pieces, and scatter over some of the Basil.
12. Finish with a drizzle of the Oil, and an optional splash of Lemon juice or Balsamic for some acidity, and we are ready to serve.
