Puff Pastry Pizza

To make serve around 4 people.

INGREDIENTS

Plumb Tomatoes - 1 tin

Tomato paste - 1 heaped Tbsp

Onion - 1 average sized onion

Garlic - 1-2 cloves

Fresh Basil - 1-2 cloves

Puff Pastry - 400g sheet

Grated Mozzarella - 80g

Parmesan - 1-2 cloves

 INSTRUCTIONS

1. Start, by finely dicing an Onion, and a few cloves of Garlic.

2. Add a Saucepan to a medium heat, add olive Oil and the Onion.

3. Season the Onion, and gently sweat down until soft, but without any colour.

4. Add the Garlic, and sweat off for another 3-5 minutes.

5. Then, add a Tbsp of Tomato paste, and fry off for 2-3 minutes.

6. Add a tin of plumb Tomatoes, along with a few sprigs of fresh Basil, and cook out for around 20 minutes.

7. After 20 minutes, remove the Basil, and leave the Sauce to cool.

8. Lay out a sheet of Puff Pastry, and fold in the edges creating a border, or crust.

9. Spoon on some of the Sauce and spread over the Pastry.

10. Place the Pizza in the oven, set to 180 for 15 minutes, until the Pastry has started to puff up and go golden brown.

11. Sprinkle over some Mozzarella Cheese, and grate over some Parmesan.

12. Place the Pizza back in the oven for another 5 minutes, then remove and finish with a few leaves of Basil, and serve.
