Garlic & Herb Spinach
(To serve 2-4 people)
INGREDIENTS
Spinach - 600g
Butter - 1 Tbsp
Garlic - 1 clove
Parsley - small handful
Coriander - small handful
Chives - small handful
Mint - small handful
Basil - small handful
Lemon - 1 Lemon
INSTRUCTIONS
1. Start by roughly dicing the Herbs, Parsley, Coriander, Mint, Basil, Chives, you want them fairly fine.
2. Then, grate, or very finely dice, 1-2 cloves of Garlic.
3. Add a large frying pan to a low heat.
4. Add a Tbsp of Butter to the pan, and gently melt.
5. Once the Butter is melted and very gently foaming, add 1-2 Tsp of the Garlic.
6. Sweat off the Garlic for around 2 minutes.
7. Add The Spinach, and fold and turn it in the Garlic Butter.
8. Gently wilt down the Spinach as you turn it gently in the pan.
9. As soon as it is ready, add a good pinch of the Herbs, zest in a Lemon along with a little squeeze of juice.
10. Season the Spinach with Salt and Pepper, and serve.
