Penne Arrabiatta

(To serve 2 people)

INGREDIENTS

Penne Pasta - 300g

Plumb Tomatoes - 1 tin

Garlic - 2-4 cloves

Fresh red Chillies - 2-4 Chillies

Olive Oil - 4-5 Tbsp

Fresh Basil - small handful

 INSTRUCTIONS

1. Start by finely dicing the Garlic, and Basil leaves.

2. Then, slice the Chillies length ways into strips.

3. Add a large frying pan to a medium heat, and add 4-5 Tbsp of Olive Oil.

4. Drop in the Chillies and gently sweat them down for a few minutes.

5. After 2-3 minutes, add the Garlic and continue to gently fry for another 2 minutes.

6. Then we want to add the tin of Tomatoes, and season with Salt and Pepper.

7. Turn down the heat so the Tomato is gently simmering.

8. At this point add a saucepan of Water to a high heat, season the Water generously, and bring to a boil.

9. Once the Water is boiling, add the Penne Pasta.

10. Cook the Penne for 2 minutes less than the cooking time on the packet.

11. Once cooked, and just short of el dente, remove a cup of the Pasta Water, drain the Penne, and place it back into the Saucepan.

12. Finish the Arrabiatta Sauce with a small handful of the Basil, stir, and add some of the Sauce to the Penne.

13. Add a little splash of the Pasta Water.

14. Gently stir and toss the Pasta in the Sauce.

15. Spoon some of the Penne onto a plate, finish with Parmesan, and a few more fresh Basil leaves, and serve.
