Greek Pasty (Recipe Roulette)

To make 1-2 Pasty’s.

INGREDIENTS

Puff Pastry - 320g

Pomegranate - 3 tbsp of the seeds

Red Onion - 1 onion

Bell Pepper - 1 pepper

Sausage - 3 sausages

Feta Cheese - 60g

Olives - 10 olives

Orange - 1 large orange

Fennel seeds - 1 tbsp

Bread - half a slice

Egg - 1 egg

 INSTRUCTIONS

1. Start by cutting the pomegranate in half, and knocking out the fruity seeds, into a bowl.

2. Finely dice a red Onion, and bell Pepper.

3. Add Olive Oil to a pan, and add the Pepper and Onion, keep the heat on medium.

4. Season with Salt and Pepper, and sweat off the Onion and Pepper.

5. Once softened, with a touch of colour, remove the Pepper and Onion.

6. Add 3 Sausages to a mixing bowl, and remove the skins.

7. To the Sausage meat, add a pinch of Fennel seeds, zest in an orange, and add the Pepper and Onion.

8. Break up 60g of Feta Cheese into the Sausage mix, and add a tbsp or 2 of the Pomegranate.

9. Cut around 10 Olives into quarters, and add them to the bowl.

10. Lastly, for the Filling, pick some Bread into the Sausage mix, just a small handful*

*this will help to stop the pastry going soggy as the sausage mix will be a little wet

11. Season the Sausage mix, and mix it up thoroughly.

12. Next, make a quick Egg wash, by beating an Egg in a bowl, also, pre heat the Oven to 180 degrees C.

13. Lay out the puff Pastry, then cut out a large circle using a side plate to guide you.

14. Lay the filling in the centre, and spread it out over one half of the Pastry, leaving a border.

15. Brush the edge of the Pastry with the Egg wash, fold over the Pastry, and crimp the Edge, sealing it tightly.

16. Liberally, brush the Pasty in the Egg wash, sprinkle over some Fennel seeds, and Sea Salt.

17. Place the Pasty in the oven and bake for around 40 minutes, until the Pastry is golden brown and puffed up.

18. Remove the Pasty once it is puffed up and golden brown, leave it to cool for around 5 minutes, then serve.
