Guacamole

To serve around 4 people.

INGREDIENTS

Red Onion - 1 average sized onion

Tomato - 1 average sized tomato

Fresh Coriander - 1 - 2 handfuls

Fresh Limes - 2 average sized Limes

Pickled Jalapenos - 2 Tbsp

Avocado - 2 large Avocados

 INSTRUCTIONS

1. Start, by finely dicing the red Onion.

2. Then cut the Tomato into quarters, remove the seeds, and finely dice*

*dice the tomato and onion the same size

3. Take a handful of Coriander, and remove the bigger stems.

4. Add the Coriander to a blender along with the juice of 2 Limes, and 2 Tbsp of pickled Jalapenos.

5. Blend the Coriander, Lime and Jalapeno.

6. Next, skin and de stone 2 Avocados.

7. Add the flesh to a mixing bowl, and roughly mash.

8. Add, 1 Tbsp of the diced Tomato, 1 Tbsp of the Onion, stir through, and season with Salt and Pepper.

9. Then, we want to add 2 Tbsp of the Blended Coriander, Jalapeno and Lime, taste, adjust, and serve.
