Reverse Searing a Steak

To serve as many people as required.

INGREDIENTS

Steak -any of your choice

Butter - 1 - 3 Tbsp

Oil - any of your choice

 INSTRUCTIONS

1. Start, by patting your Steak dry.

2. Add a dash of Oil, and massage into the Steak.

2. Liberally season the Steak with Salt.

3. Place the Steak into a pre heated oven, set to 150 degrees.

4. Cook for around 30 minutes, until the Steak hits an internal temperature of 42 degrees C**, Turning it every 5 minutes*

*the internal temperature will change depending on how you want to cook your Steak - these times are for medium rare

**you want to use a heat probe for this method if you can, if this is not possible the times I quote are for medium rare, but it is important to monitor the steaks temperature

5. Pre heat your frying pan soon as the Steak hits the desired temp.

6. Soon as it is ready, remove the Steak, add a dash of Oil to the pan, and lay in the Steak.

7. Turn the Steak every 30 seconds, and we only want it in the pan as long as it takes to develop a good crust*

*in a very hot pan, this will take between 2 - 3 minutes

8. After 3 - 4 turns of the Steak, add Butter and baste for the last minute.

8. Remove the Steak when you have a good crust, and the temperature is between 45 - 48 degrees C.

9. Leave the Steak to rest for about 10 minutes, and serve.
