Sweet Potato Mash

To serve around 4-5 people.

INGREDIENTS

Sweet Potato - 400g

Shallots - 2 average sized shallot

Butter - around 1 Tbsp

Chicken Stock - 1-2 ltr

Sage - 1 small handful

Coriander - 1 small handful

Garlic - 2-3 cloves

 INSTRUCTIONS

1. Start, by finely dicing the Shallots, and 2 cloves of Garlic.

2. Next, finely dice a small handful of fresh Sage, and Coriander.

3. Lastly, peel the sweet Potato, and cut into inch sized cubes.

4. Drop the Potato into a Saucepan of simmering Chicken stock, and cook until they get soft, around 12 minutes.

5. Drain the Potatoes, but retain some of the Stock.

6. Add a dash of Oil to a pan, along with the Shallots.

7. Gently sweat off the Shallots until soft, then add the Garlic.

8. Give the Garlic 3 minutes, then add back in the Potato, along with 3-5 Tbsp of the Stock.

9. Mash the Potato, then finish with a knob of Butter and a handful of the herbs.

10. Season to taste with Salt and Pepper, and serve.
