Confit Garlic Paste

To serve as many as required.

INGREDIENTS

Garlic - as much as required

Oil - as much as required

INSTRUCTIONS

1. First, peel the Garlic*

*use as much garlic as you like, but you probably don’t want to use less than around 4-5 bulbs

2. Roughly chop the Garlic, fairly coarsely.

3. Add the Garlic to a Saucepan.

4. Pour in enough Oil to just cover the Garlic*

*the oil you use is entirely up to you

5. Bring the Garlic up to a very gentle simmer.

6. Simmer the Garlic on a very low heat for around an hour, stirring every few minutes.

7.Simmer the Garlic until it is soft and it will turn a slightly darker shade of colour, but we don’t want any real colour on them so keep the heat low.

8. Once the Garlic is really soft, drain off the Oil*

*you can keep the Oil, it will effectively be a nice garlic oil, or, you can use it to store the confit garlic paste

9. Take the Garlic and add it to a blender.

10. Blitz the Garlic until really nice and smooth, and serve.
