Full English Sausage Roll

To serve around 4-5 people.

INGREDIENTS

Puff Pastry - 350g

Sausages - 200g

Bacon - 3-4 rashers

Black Pudding - 80g

Mushrooms - 60-80g

Cherry Tomatoes - around 8 tomatoes

Baked Beans - 3-5 Tbsp

Egg - 2 eggs

“Stale” Bread - 1 Tsp

Cumin - 1 Tsp

Smoked Paprika - 1.5 Tsp

Fennel Seeds - 1 Tsp

Nutmeg - third of a whole nutmeg

 INSTRUCTIONS

1. Start, by removing the Sausage skins, and placing the meat into a large mixing bowl.

2. Next, roughly dice the Black pudding and add to the bowl.

3. Cut the Bacon into small lardons, and this also goes into the bowl, along with an Egg.

4. fairly finely dice the Mushrooms and add these to the mix, along with around 3 Tbsp of Baked Beans.

5. Next, take a thick slice of stale Bread, finely dice and add this to the Sausage mix*

*this is important or the sausage roll mix will be too wet and can make the pastry soggy

6. Grate in a third of a whole Nutmeg.

7. Add 1 Tsp of Smoked Paprika, 1 Tsp of Cumin, 1 Tsp of Fennel Seeds.

8. Season the mix with Salt and Pepper then mix it thoroughly.

9. Take an Egg and whisk with a folk in to an Egg wash.

10. Pre heat the Oven to 180 degrees, then, Lay out the Puff Pastry.

11. Place the Sausage mix on top, flatten it out and lay on the Tomatoes.

12. Roll over the Sausage mix concealing the Tomatoes inside, then shape it in to a Sausage.

13. Egg wash one side of the Pastry and fold over the other side.

14. Roll the pastry into a tube, sealing the join.

15. Trim off the edges, and brush the Sausage in the Egg wash.

16. Sprinkle over some Sea Salt and Fennel Seeds, then bake in the oven for around 45 minutes*

*we want the pastry puffed up and golden brown

17. Remove the Sausage Roll and leave it to cool for 10 minutes.

18. Cut the Sausage roll into portions, and serve warm.
