Ramen Noodle “Hack”

To serve 1 person.

INGREDIENTS

Ramen Noodles - 1 Pkt

Ginger - Inch sized cube

Garlic - Inch sized cube

Sugar - 1 Tsp

Spring Onions - 2 Onions

Rice Wine Vinegar - 2 Tbsp

Soy Sauce - 2 Tbsp

Miso Paste - 1 Tbsp

Peanut Butter - 1 Tbsp

Eggs - 1-2 Eggs

Sesame Seeds - 1-2 Tbsp

INSTRUCTIONS

1. First, Add some sesame seeds to a dry frying pan, and toast for between 4-5 minutes, until toasty and brown.

2. Empty the seeds into a bowl.

3. Add any flavouring packets from the Ramen into a Sauce Pan*

*any pastes, herbs, oils etc

4. Peel, and chop in half a chunk of Ginger, and 2 cloves of Garlic.

5. Thinly slice the root end of a couple of spring Onions.

6. Add the spring Onion, Garlic and Ginger to the pan.

7. Pour in some boiling Water.

8. Add a Tsp of Sugar, 2 Tbsp of Rice Wine Vinegar, and 2 Tbsp of Soy Sauce to the broth.

9. Bring the broth to a boil, lower the heat to a strong simmer, and cook this for 3-5 minutes to infuse the flavours.

10. Add 1 flat Tbsp of Miso paste to a bowl, along with a flat Tbsp of Peanut Butter.

9. Add the Noodles to the broth, and cook until ready*

*usually 1-2 minutes

11. While the Noodles cook, add a ladle of stock to the Miso and Peanut Butter, and mix into a paste.

12. Once the Noodles are ready, pour in the Miso and Peanut Butter, and stir thoroughly.

13. Add 2 Eggs to the same bowl and whisk.

14. Turn off the hob, remove the pan from the stove, and wait for 30 seconds for it to cool down.

15. Slowly pour in the Eggs as you stir constantly, and continue to stir for 1-2 minutes to thicken the Sauce.

16. Add a sprinkle of the toasted Sesame Seeds.

17. Finely dice the tops (leaves) of the spring Onions, and garnish the Noodles.

18. Taste the Noodles, and season (Salt & Pepper) if required, then serve.
