Venison, Chorizo & Hot Honey Quesadillas

To serve 4 people.

INGREDIENTS

Tortillas - 8 Tortillas

Venison Sausages - 250g

Chorizo - 150g

Chilli flakes - as much as required

Honey - 1 Tbsp per Quesadilla

Cheddar Cheese - 500g

Dried Tarragon - 1 Tsp

Smoked Paprika - 1 heaped Tsp

Red Wine Vinegar - 2-3 Tbsp

 INSTRUCTIONS

1. Start by adding a dash of Oil to a pan, on a medium heat.

2. Remove the skin from the Sausage, and add the meat to the pan.

3. Dice up the Chorizo, and add this to the pan.

4. Break up the Sausage as it cooks.

5. Quickly grate out the Cheese into a bowl.

6. Once the Meat is caramelised and cooked through, add a heaped Tsp of Smoked Paprika, a Tsp of Tarragon, and a pinch of Chilli flakes.

7. Continue to cook for another 1-2 minutes then deglaze with a splash of red Wine Vinegar.

8. Reduce the Vinegar into a syrup, then place the meat into a bowl ready.

9. Take a large, dry, frying pan, lay in a Tortilla, and add a layer of the Cheese.

10. Season very lightly with Salt and Pepper.

11. Add some of the meat, and a little drizzle of Honey.

12. Place another Tortilla on top.

13. Fry the Tortilla on one side, until the Tortilla gets crispy, then flip.

14. Fry the Tortilla on the other side until crispy, make sure the Cheese is gooey and melted, then remove from the heat.

15. Lay the Quesadilla onto a board, cut it into quarters, and serve.
