Croissant Sandwich (Croque Madam)

To serve 2-4 people.

INGREDIENTS

Croissant - 1 per person

Egg - 1 per person

Ham - 2 slices per person (thick cut)

Flour - 1 Tbsp

Butter - 1 Tbsp

Milk - half a pint

Cheddar Cheese - 200g

Parmesan - 200g

Chives - a small handful

 INSTRUCTIONS

1. Start by grating the Cheddar Cheese into a large mixing bowl.

2. Then, grate in around the same amount of Parmesan.

3. Add a sauce pan to a medium hob, and pop in 2 Tbsp of Butter.

4. Once the Butter has melted add 2 Tbsp of plain Flour.

5. Cook out the Flour and Butter for around 2 minutes as you mix it into a paste.

6. Slowly add some Milk as you stir, just a splash at a time, until you have a nice thick bechamel sauce.

7. Add the grated Cheese to the Sauce along with a few Tsp of Dijon Mustard, and season.

8. Stir in the Cheese and Dijon until the Cheese has melted and you have a really thick Cheese sauce.

9. Then, take a dry frying pan, cut the Croissant in half, and lay it in the pan.

10. Quickly, dice some Chives and set aside, and once the inside of Croissant is toasted, remove from the pan.

11. Add a Tsp of butter to the pan, and crack in an Egg.

12. Fry the Egg however you like, a runny Yolk is best.

13. While the Egg cooks, add some good quality Ham to the Croissant, and spoon in some of the Cheese sauce.

14. Lay on the Egg, and finish with a grating of Parmesan, a sprinkle of Chives, and serve.
