Mayonnaise

To make around 6 servings.

INGREDIENTS

Eggs - 2 large eggs

Dijon Mustard - 1 Tsp

White Wine Vinegar - 2-3 Tsp

Lemon - 1 lemon

Sunflower Oil - as much as required

 INSTRUCTIONS

1. Start, by separating out 2 Egg yolks into a blender.

2. Next, add 1 heaped Tsp of Dijon Mustard.

3. Then, add 2-3 Tsp of white Wine Vinegar.

4. Along with the Vinegar, add a little squeeze of Lemon juice.

5. Blend the Egg yolks with Mustard, Lemon and Vinegar for a few moments.

6. Then, slowly start incorporating the sunflower Oil, a few Tbsp at a time, and blending.

7. Keep adding Oil, and blending until you have the desired consistency.

8. Season the Mayo to taste, and blend for a final 10 seconds, then serve.
